Billy Button - 2023 Rosso Tonic The crops yielded from oldA delicious blend of Shiraz, Tempranillo, Sangiovese and Nebbiolo. All components were fermented separately in open tubs and hand plunged. A combination of selected yeast and wild yeast were used across the different components. Each batch was pressed directly to a variety of vessels, including old oak, stainless steel and Flexcuz`be, for malolactic fermentation and maturation.
