Spontaneously fermented in stainless steel vats in order to preserve the aroma and the beautiful freshness. Macerated on skins for approximately 1 week. Quite varietally true, sticking to fleshy orchard fruit & fresh fennel aromatics, stacks of freshness from acidity, & the maceration bringing a more savoury spice to close the palate.
