If it had been made in Denmark, it might have tasted like this. The cask is being filled with spirit made from our 100 year old Imperial barley, revived from a handful of grains preserved in the Nordic Gene Bank and grown in our own fields. It is left to age in a fresh 125 litre ex bourbon cask. An honest expression, where the unique character of the Imperial barley comes through clearly, with notes of dusty
